HARVEST

Half manual, half mechanical, harvesting is handled by Jean de Cibeins , variety after variety, according to the yield, maturity, exposition of the plots and quality of the soils. Generally speaking, the quality of the grapes and thus of the vineyards is of utmost importance.


Wine-making
 

The techniques of vinification are decided upon according to the vintage and the targeted blends, then implemented.

For red wines, the old hillside Carignans, the Grenache and Syrah are fermented whole. The remaining of the crop is destemmed. A long maceration with punching of caps is applied to Prestige reserves, a shorter maceration to the Tradition cuvée.

For white wines, which are now an old tradition at Cabriac, a direct pressing with pneumatic press is currently used to select the best juice without grinding up the grapes.

For the rosés, bleeding is undergone at low temperature.




 
AGEING

Some red wines are put rather early in casks before the malolactic fermentation. These wines are to be part of blends for selected reserves.

For white wines, the stirring of the lees in barrels is applied.

The blends are made according to the tasting to achieve required specialties :
a wine for ageing, rather structured, with smooth tanins for Prieuré Saint-Martin, Elegance, Refinement and
complexity For Marquise de Puivert.

The barrel cellar is isolated and air conditioned, temperature and hygrometry are controlled.

Finally, when the wines are estimated suitable for bottling, the operation is being performed on the right place where they have been made, thus deserving the label « bottled on the estate ».




Distinctions

The wines of the castle of Cabriac are often quoted in the French press as international as well as rewarded by many medals to different regional and national competitions.
